Rooster in its Riesling sauce

For 4 persons :


Ingredients :  Rooster in its Riesling sauce Copyright CIVA

 

1 Rooster of 1,5 kg approx.
4 shallots,
75 grams of butter,
1 egg yellow,
100 g of fresh thick cream,
25 cl of Alsatian
Riesling,
1 small cup of broth or gravy,
Parsley,
1 clove garlic,
1 soup spoon of white flour,
1 brandy glass of Cognac,
150 g fresh Paris mushrooms,
Salt, muscade nut, pepper,
2 soup spoon of oil.

 

Preparation : 

 

Ask your butcher to cut the rooster into pieces,
In a cooking pan, fry the rooster pieces in half the oil, half the butter,
Season and let cook 5 minutes,
Spread over with parsley , the thinly cut garlic and shallots,
To Flamber wiht the Cognac,
Pour the Riesling and the broth,
Leave cook gently for 30 minutes approx.,
Fry the mushrooms in the remaining half of the butter,
Dop in the cooking pan,
Just prior serving, mix the flower, the egg yellow and the fresh cream,
Add this gravy into the frying pan WITHOUT having it boil,
Serve very warm with fresh home made Alsatian noodles.


We suggest to drink a chilled Riesling d'Alsace with it.
